Brother and I are some of the very few alchemists that can do it by clapping; it's second nature to us, but it takes a lot of studying and memorization to be versatile with alchemy. And a lot of people just don't need that much broad knowledge. We grew up in a farming village so if you're, say, a sheep farmer, being able to mend tools and fences is more valuable than knowing how to create weapons or explosions.
